Ingredients
Scale
Protein:
- 550 g chicken thighs
Dough:
- 500 g flour
- 6 g baking powder
- 275 ml water
- 5 ml sunflower oil
- 7 g salt
- 12 g honey
Filling and Seasoning:
- 220 g yellow onion
- 5 g ras el hanout
- 2 g turmeric powder
- 3 g cayenne powder
- 3 g garlic powder
- 4 g salt
- 1 g dried parsley
- 10 ml olive oil
- 1 cheese
- 5 ml sunflower oil
Instructions
- Combine 500 g flour, 7 g salt, 12 g honey, 6 g baking powder, and 5 ml sunflower oil in a large mixing bowl. Pour 275 ml water gradually while kneading until your dough becomes smooth and elastic.
- Dice 220 g yellow onion into fine pieces. Heat 10 ml olive oil in a skillet over medium heat at 350°F and sauté onions until translucent.
- Add 550 g chicken thighs to the skillet with 5 g ras el hanout, 2 g turmeric powder, 3 g cayenne powder, 3 g garlic powder, 4 g salt, and 1 g dried parsley. Cook chicken for 12-15 minutes until internal temperature reaches 165°F.
- Divide your prepared dough into equal portions and roll each section into thin circles approximately 6 inches in diameter.
- Place a spoonful of cooked chicken mixture and small cheese fragments in the center of each dough circle.
- Carefully fold dough edges to create sealed half-moon shapes, pressing edges firmly with your fingers.
- Heat additional sunflower oil in a clean skillet at 375°F. Gently fry each msmen until golden brown, approximately 2-3 minutes per side.
- Remove msmen from skillet, drain excess oil on paper towels, and serve warm.
Notes
- Handle the dough gently to keep it soft and pliable, avoiding overworking which can make it tough.
- Ensure chicken is fully cooked and seasoned well before filling the msmen to maximize flavor depth.
- Let the dough rest for 15-20 minutes after kneading to help develop gluten and make rolling easier.
- For a gluten-free version, substitute the wheat flour with a blend of rice and almond flour to maintain a similar texture.
