Instructions

  3. Sprinkle 1 teaspoon fresh chopped thyme into the mushroom mixture. Season with salt and pepper. Remove pan from heat and let your mixture cool slightly.
  4. Mix your cooled mushroom blend with 1 cup ricotta cheese and ½ cup grated Parmesan in a mixing bowl. Stir until ingredients are evenly combined.
  5. Warm your oven to 400°F. Unfold the thawed puff pastry sheet on a lightly floured surface. Roll gently with a pin to create an even thickness.
  6. Spread your mushroom-cheese filling down the pastry’s center, leaving 2-inch margins on long sides. Fold the long pastry sides over the filling.
  7. Carefully roll the strudel from one short end to create a log shape. Place seam-side down on a parchment-lined baking sheet.
  8. Brush the entire surface with 1 beaten egg. This creates a golden-brown exterior during baking.
  9. Bake at 400°F for 20-25 minutes until the pastry turns crisp and deep golden brown. Remove and let rest for 5 minutes before slicing.
