- Toss potato pieces into the skillet with 1 teaspoon smoked paprika, 1 teaspoon Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper. Spread potatoes evenly and cook for 6-7 minutes, turning occasionally to achieve crispy exterior.
- Incorporate sliced bell pepper into the skillet and continue cooking for 3 minutes until slightly softened.
- Return sausage to the skillet and mix all ingredients thoroughly. If using spinach, add 1 cup now and stir for 2 minutes until wilted.
- Let everything meld together for a final 2 minutes at medium heat. Sprinkle 2 tablespoons fresh chopped parsley over the top before serving hot.
