Description

Sausage and Potatoes Skillet brings comfort straight from the kitchen to your dinner table in one simple pan. Hearty ingredients mingle together for a quick, satisfying meal that comes together faster than you can call everyone to eat.

Ingredients

Scale

Main Ingredients:

  • 1.5 pounds baby potatoes
  • 1 pound smoked sausage

Aromatics and Vegetables:

  • 1 medium onion
  • 2 cloves garlic
  • 1 bell pepper

Seasonings and Extras:

  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup fresh spinach
  • 2 tablespoons fresh parsley

Instructions

  1. Slice 1 pound smoked sausage into ½-inch pieces and halve or quarter 1 ½ pounds baby potatoes for even cooking.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat at 350°F. Sear sausage pieces for 4-5 minutes until golden brown edges develop.
  3. Add diced onion and minced garlic to the skillet. Stir and cook for 2 minutes until fragrant and onions become translucent.
  4. Toss potato pieces into the skillet with 1 teaspoon smoked paprika, 1 teaspoon Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper. Spread potatoes evenly and cook for 6-7 minutes, turning occasionally to achieve crispy exterior.
  5. Incorporate sliced bell pepper into the skillet and continue cooking for 3 minutes until slightly softened.
  6. Return sausage to the skillet and mix all ingredients thoroughly. If using spinach, add 1 cup now and stir for 2 minutes until wilted.
  7. Let everything meld together for a final 2 minutes at medium heat. Sprinkle 2 tablespoons fresh chopped parsley over the top before serving hot.

Notes

  • Choose a high-quality smoked sausage or kielbasa for maximum flavor depth and richness.
  • Parboil potatoes beforehand to ensure they become crispy on the outside while remaining tender inside.
  • For a lighter version, swap pork sausage with turkey or chicken sausage and use less oil during cooking.
  • When adding spinach, chop it finely so it wilts quickly and distributes evenly throughout the skillet.
