Description

Cajun Sausage and Rice Skillet brings spicy Southern comfort right to your dinner table, packed with bold flavors that’ll make your taste buds dance. Sizzling sausage, tender rice, and zesty seasonings combine for a quick, satisfying meal that delivers pure regional deliciousness.

Ingredients

Scale

Main Ingredients:

  • 14 ounces (396 grams) andouille sausage
  • 1 cup (185 grams) long grain white rice
  • 1 red bell pepper
  • 1 green bell pepper

Supporting Ingredients:

  • 1 yellow onion
  • 3 garlic cloves
  • 2 tablespoons (30 milliliters) olive oil
  • 2 cups (473 milliliters) chicken broth

Garnish:

  • 2 green onions

Instructions

  1. Warm 2 tablespoons (30 ml) olive oil in a large skillet over medium heat (375°F/190°C). Sauté 1 diced yellow onion and 1 cup chopped bell peppers until soft and translucent, approximately 4-5 minutes.
  2. Add 12 ounces (340 g) sliced Andouille sausage to the skillet. Brown the sausage evenly on both sides, cooking for 6-7 minutes until caramelized edges develop.
  3. Sprinkle 3 minced garlic cloves and 2 tablespoons Cajun seasoning into the pan. Stir continuously for 45-60 seconds until the aromatics become fragrant and release their essential oils.
  4. Incorporate 1½ cups long-grain white rice into the skillet. Pour 3 cups chicken broth over the mixture, stirring thoroughly to distribute ingredients evenly.
  5. Increase heat momentarily to generate a gentle boil, then immediately reduce temperature to low (simmer setting, around 200°F/93°C). Cover skillet tightly with a lid.
  6. Allow rice to steam undisturbed for 22-24 minutes. Check that liquid is completely absorbed and rice kernels are tender.
  7. Remove from heat and let stand, covered, for 5 additional minutes. Gently separate rice grains with a fork to create a fluffy texture.
  8. Garnish with ¼ cup thinly sliced green onions before serving hot directly from the skillet.

Notes

  • Select a high-quality Andouille sausage for the most authentic Cajun flavor and richness.
  • Use long-grain rice to ensure the perfect fluffy texture that won’t become sticky or clumpy during cooking.
  • For a lighter version, swap regular Andouille for turkey sausage and use brown rice to boost nutritional value.
  • Let the skillet rest covered for 5 minutes after cooking to help rice absorb remaining moisture and become extra tender.
