Instructions

  1. Slice 1 pound of Cajun sausage into half-inch rounds at a diagonal. Chop 1 yellow onion and both bell peppers into uniform pieces.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat at 375°F. Sear sausage slices for 5-6 minutes until golden brown on both sides. Transfer sausage to a separate plate.
  3. Reduce heat to medium and sauté chopped onions and bell peppers for 4-5 minutes until they soften and become translucent. Add 2 minced garlic cloves and cook for an additional 45-60 seconds.
  4. Pour entire 14.5-ounce can of diced tomatoes, rinsed 15-ounce cans of black beans and corn into the skillet. Add 1 cup uncooked long-grain white rice.
  5. Stir in 2 cups chicken broth, 1 teaspoon Cajun seasoning, ½ teaspoon smoked paprika, and optional ¼ teaspoon cayenne pepper. Mix ingredients thoroughly.
  6. Increase heat to bring mixture to a boil, then reduce to low heat. Cover skillet and simmer for 22 minutes without lifting lid.
  7. Remove skillet from heat and let rice rest, covered, for 5 minutes. This allows rice to absorb remaining moisture.
  8. Gently fold browned sausage back into the rice mixture. Season with salt and pepper to your preference.
  9. Sprinkle fresh chopped parsley and sliced green onions over the top before serving immediately at 165°F.
