- Heat 1 tablespoon olive oil in a large skillet over medium-high heat at 375°F. Sear sausage slices for 5-6 minutes until golden brown on both sides. Transfer sausage to a separate plate.
- Reduce heat to medium and sauté chopped onions and bell peppers for 4-5 minutes until they soften and become translucent. Add 2 minced garlic cloves and cook for an additional 45-60 seconds.
- Pour entire 14.5-ounce can of diced tomatoes, rinsed 15-ounce cans of black beans and corn into the skillet. Add 1 cup uncooked long-grain white rice.
- Stir in 2 cups chicken broth, 1 teaspoon Cajun seasoning, ½ teaspoon smoked paprika, and optional ¼ teaspoon cayenne pepper. Mix ingredients thoroughly.
- Increase heat to bring mixture to a boil, then reduce to low heat. Cover skillet and simmer for 22 minutes without lifting lid.
- Remove skillet from heat and let rice rest, covered, for 5 minutes. This allows rice to absorb remaining moisture.
- Gently fold browned sausage back into the rice mixture. Season with salt and pepper to your preference.
- Sprinkle fresh chopped parsley and sliced green onions over the top before serving immediately at 165°F.
