Instructions
- Grab a sharp knife and dice 4 medium potatoes into uniform ½-inch cubes. Chop 1 onion and slice 1 pound of smoked sausage into ¼-inch rounds.
- Pour 1 tablespoon olive oil into a large skillet and heat over medium-high heat for 2 minutes until shimmering. Add potato cubes and cook for 10 minutes, stirring occasionally to ensure even golden browning.
- Transfer golden potatoes to a separate plate. In the same skillet, arrange sausage slices in a single layer and cook for 5 minutes, flipping halfway to achieve a nice caramelized exterior.
- Toss chopped onion, minced garlic, and diced bell pepper into the skillet with sausage. Saute for 5 minutes, stirring frequently to prevent burning.
- Return potato cubes to the skillet. Sprinkle 1 teaspoon paprika, 1 teaspoon dried thyme, salt, and pepper over the mixture. Stir gently to combine and cook for an additional 5-7 minutes.
- Remove skillet from heat and garnish with fresh chopped parsley. Serve hot directly from the pan for maximum comfort and flavor.
