Description

Smoked Sausage and Potatoes is my go-to comfort meal when craving something hearty and satisfying. Packed with savory sausage, tender potatoes, and simple seasonings, this one-pan wonder delivers maximum flavor with minimal effort.

Ingredients

Scale

Protein:

  • 1 pound smoked sausage

Main Vegetables:

  • 4 medium potatoes
  • 1 onion
  • 1 bell pepper
  • 2 cloves garlic

Seasonings and Finishing Touches:

  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper
  • Fresh parsley

Instructions

  1. Grab a sharp knife and dice 4 medium potatoes into uniform ½-inch cubes. Chop 1 onion and slice 1 pound of smoked sausage into ¼-inch rounds.
  2. Pour 1 tablespoon olive oil into a large skillet and heat over medium-high heat for 2 minutes until shimmering. Add potato cubes and cook for 10 minutes, stirring occasionally to ensure even golden browning.
  3. Transfer golden potatoes to a separate plate. In the same skillet, arrange sausage slices in a single layer and cook for 5 minutes, flipping halfway to achieve a nice caramelized exterior.
  4. Toss chopped onion, minced garlic, and diced bell pepper into the skillet with sausage. Saute for 5 minutes, stirring frequently to prevent burning.
  5. Return potato cubes to the skillet. Sprinkle 1 teaspoon paprika, 1 teaspoon dried thyme, salt, and pepper over the mixture. Stir gently to combine and cook for an additional 5-7 minutes.
  6. Remove skillet from heat and garnish with fresh chopped parsley. Serve hot directly from the pan for maximum comfort and flavor.

Notes

  • Dice potatoes uniformly to ensure even cooking and golden-brown texture.
  • Use a cast-iron skillet for better heat distribution and deeper flavor development.
  • Choose high-quality smoked sausage for richer taste, preferably from a local butcher.
  • For a low-carb version, swap potatoes with cauliflower or turnips to reduce calories.
