Description

Stove top stuffing meatloaf brings comfort right to your dinner table with a clever twist on classic comfort food. Weeknight dinners become super simple when you blend seasoned ground beef with boxed stuffing mix for a hearty, satisfying meal that everyone will devour.

Ingredients

Scale

Protein:

  • 2 pounds lean ground beef
  • 2 large eggs

Starch:

  • 1 6-ounce box Stove Top stuffing mix

Liquid & Condiment:

  • ½ cup water
  • ½ cup ketchup

Instructions

  1. Preheat your oven to 350°F and coat a 9×13″ baking dish with non-stick cooking spray.
  2. Whisk 2 large eggs and ½ cup water in a large mixing bowl until fully combined.
  3. Add the entire 6-ounce box of Stove Top stuffing mix and 2 pounds of ground beef to the egg mixture.
  4. Pour ¼ cup ketchup into the meat mixture and blend thoroughly with your hands until ingredients are evenly distributed.
  5. Mold the meat mixture into a compact loaf shape directly in the prepared baking dish.
  6. Spread the remaining ¼ cup ketchup across the top of the meatloaf for a tangy glaze.
  7. Bake in the 350°F oven for 55 minutes, ensuring the internal temperature reaches 160°F.
  8. Remove from the oven and allow the meatloaf to rest for 10 minutes before slicing and serving.

Notes

  • For a juicier meatloaf, choose ground beef with a slightly higher fat content like 80/20 or 85/15.
  • When mixing ingredients, handle the meat gently to prevent a tough texture – overmixing can make your meatloaf dense.
  • If watching sodium intake, select a low-sodium stuffing mix and reduced-sugar ketchup to modify the recipe.
  • Consider adding finely chopped vegetables like bell peppers or onions to boost nutrition and add extra flavor complexity.
