Ingredients
Scale
Main Proteins:
- 1.5 pounds shrimp
Aromatics and Seasonings:
- ½ cup diced yellow onion
- 6 cloves garlic
- ½ teaspoon crushed red pepper flakes
- Kosher salt
- Ground black pepper
Liquid and Dairy Components:
- ¼ cup unsalted butter
- ⅔ cup dry white wine
- 1.5 cups heavy cream
- 1 cup grated Parmesan cheese
- Chopped fresh parsley
- Lemon wedges
- Cooked pasta or rice
Instructions
- Pat 1 ½ pounds of shrimp dry with paper towels and sprinkle generously with kosher salt and ground black pepper.
- Melt 2 tablespoons of unsalted butter in a large skillet over medium-high heat at 350°F. Cook shrimp for 2-3 minutes per side until they turn bright pink, then transfer to a clean plate.
- Reduce heat to medium and add remaining 2 tablespoons of butter to the same skillet. Toss in ½ cup diced yellow onion and sauté for 3-4 minutes until translucent.
- Add 6 minced garlic cloves and ½ teaspoon crushed red pepper flakes to the skillet. Stir continuously for 30-45 seconds until fragrant.
- Pour ⅔ cup dry white wine into the skillet, scraping any browned bits from the bottom with a wooden spoon. Let the liquid simmer for 2 minutes.
- Gently stir in 1 ½ cups heavy cream and 1 cup grated Parmesan cheese. Whisk until the cheese melts completely and the sauce thickens slightly.
- Return the seared shrimp to the skillet, coating them in the creamy sauce. Warm the shrimp for 1-2 minutes until heated through.
- Plate the shrimp over cooked pasta or rice. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
Notes
- Fresh, large shrimp work best for maximum flavor and tender texture.
- Pat shrimp completely dry before seasoning to help achieve a perfect golden sear.
- Use a heavy-bottomed skillet for even heat distribution and preventing sauce from burning.
- When adding Parmesan, remove pan from direct heat to prevent cheese from becoming grainy or separating.
