Instructions

  1. Warm 1 tablespoon olive oil in a large skillet over medium-high heat. Brown 1 pound ground beef, breaking it into small pieces while cooking.
  2. Add chopped onion to the skillet and sauté for 5 minutes until softened. Toss in minced garlic and cook for 1 minute until aromatic.
  3. Pour in 15 ounces tomato sauce and 10 ounces diced tomatoes with green chilies. Sprinkle 1.25 ounces taco seasoning and remaining spices into the mixture.
  4. Simmer the sauce for 10-15 minutes, stirring occasionally. Let the flavors blend and sauce slightly thicken.
  5. Preheat your oven to 350°F. Lightly grease a 9×13 inch baking dish with cooking spray.
  6. Warm 12 flour tortillas by wrapping them in a damp paper towel and microwaving for 30 seconds.
  7. Spread ¼ cup beef mixture onto each tortilla. Sprinkle 2 tablespoons combined mozzarella and cheddar cheese.
  8. Roll each tortilla tightly and place seam-side down in the prepared baking dish.
  9. Pour remaining beef sauce over the rolled enchiladas. Scatter remaining 1 ½ cups cheese on top.
  10. Decorate with ½ cup sliced black olives and ¼ cup chopped green onions.
