- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes

Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat at 350°F. Carefully spread the oil to coat the entire surface.
- Drop 12 ounces of andouille sausage rounds into the hot skillet. Cook for 5-6 minutes, rotating to ensure each side browns evenly.
- Transfer the sausage pieces to a clean plate, keeping them warm and preserving their crispy exterior.
- Increase your skillet temperature to medium-high, around 400°F. Pour the remaining 1 tablespoon olive oil into the pan.

- Sauté the vegetables for 4-5 minutes until they become slightly crisp and retain a vibrant color.
- Introduce 4 minced garlic cloves to the skillet. Season with salt and black pepper to your taste preference.
- Stir the garlic and continue cooking for an additional 1 minute to release its aromatic flavors.
- Return the sausage pieces to the skillet, warming them for 1 minute to blend the flavors.
- Taste and adjust seasoning as needed, adding more salt or pepper.
- Finish the dish with ½ teaspoon red pepper flakes, sliced green onions, and fresh chopped parsley.
- Serve immediately while hot and fragrant.
Notes
- Choose Italian sausage links for authentic flavor, but chicken or turkey sausage work great if watching fat intake.
- Cut bell peppers and onions into similar-sized pieces so they cook evenly and look beautiful on the plate.
- For extra depth, deglaze the pan with white wine after cooking sausages, scraping up those delicious browned bits.
- Serve over pasta, rice, or crusty bread to soak up the flavorful pan juices and make your meal more substantial.
