Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat at 350°F. Carefully spread the oil to coat the entire surface.
  2. Drop 12 ounces of andouille sausage rounds into the hot skillet. Cook for 5-6 minutes, rotating to ensure each side browns evenly.
  3. Transfer the sausage pieces to a clean plate, keeping them warm and preserving their crispy exterior.
  4. Increase your skillet temperature to medium-high, around 400°F. Pour the remaining 1 tablespoon olive oil into the pan.
  5. Add 1 red bell pepper, 1 yellow bell pepper, and 1 small yellow onion strips to the skillet. Sprinkle 1 teaspoon Italian seasoning over the vegetables.
  6. Sauté the vegetables for 4-5 minutes until they become slightly crisp and retain a vibrant color.
  7. Introduce 4 minced garlic cloves to the skillet. Season with salt and black pepper to your taste preference.
  8. Stir the garlic and continue cooking for an additional 1 minute to release its aromatic flavors.
  9. Return the sausage pieces to the skillet, warming them for 1 minute to blend the flavors.
  10. Taste and adjust seasoning as needed, adding more salt or pepper.
  11. Finish the dish with ½ teaspoon red pepper flakes, sliced green onions, and fresh chopped parsley.
  12. Serve immediately while hot and fragrant.
