Description

Sausage egg breakfast roll ups are my go-to morning savior when hunger strikes and time is short. Wrapping warm, fluffy eggs and savory sausage in a tortilla creates a quick, satisfying breakfast that keeps you fueled and ready to tackle the day.

Ingredients

Scale

Main Ingredients:

  • 4 large eggs
  • 1 cup sausage, crumbled
  • 4 large tortillas
  • ½ cup cheese, shredded

Seasoning and Cooking:

  • 1 tablespoon olive oil

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat until it shimmers and coats the pan evenly.
  2. Crack 4 large eggs into a mixing bowl and whisk them thoroughly until the whites and yolks are completely combined.
  3. Pour the whisked eggs into the heated skillet and let them start to set for 30 seconds without stirring.
  4. Add 1 cup crumbled cooked sausage and ½ cup shredded cheese to the eggs, gently folding and scrambling until the eggs are fully cooked and no liquid remains, about 2-3 minutes.
  5. Warm 4 large tortillas for 10 seconds in the microwave to make them more pliable.
  6. Spoon an equal portion of the egg mixture onto the center of each tortilla, leaving a small border around the edges.
  7. Fold the bottom edge of the tortilla up, then tightly roll from one side to create a compact breakfast wrap.
  8. Slice each roll diagonally and serve immediately while the filling remains warm and the tortilla is soft.

Notes

  • Warm tortillas slightly before filling to prevent cracking and make rolling easier.
  • Experiment with different cheese varieties like pepper jack or sharp cheddar for extra flavor.
  • Prep ingredients ahead of time for a faster morning breakfast routine.
  • Store leftovers wrapped in foil in the refrigerator and reheat in a skillet or toaster oven for crisp edges.
