Instructions

  1. Place chicken breasts between plastic wrap and pound to an even ½-inch thickness using a meat mallet. Season both sides generously with salt and pepper.
  2. Spread ½ cup all-purpose flour on a plate. Coat each chicken piece completely, tapping off excess flour.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat at 375°F. Cook chicken for 5 minutes per side until golden brown and internal temperature reaches 165°F. Transfer chicken to a clean plate.
  4. Add remaining 2 tablespoons olive oil to the same skillet. Toss in 8 ounces sliced mushrooms and 2 minced garlic cloves. Sauté for 4-5 minutes until mushrooms release moisture and turn golden.
  5. Pour 1 cup Marsala wine and 1 cup chicken broth into the skillet. Scrape up all browned bits from pan bottom. Reduce liquid by half over medium heat for 6-7 minutes.
  6. Drop 2 tablespoons cold butter into the sauce. Swirl until butter melts completely and sauce thickens slightly.
  7. Return chicken to skillet, nestling pieces into the sauce. Spoon sauce over chicken and warm for 2-3 minutes.
  8. Sprinkle 2 tablespoons fresh chopped parsley over the dish just before serving.
