- Heat 2 tablespoons olive oil in a large skillet over medium-high heat at 375°F. Cook chicken for 5 minutes per side until golden brown and internal temperature reaches 165°F. Transfer chicken to a clean plate.
- Add remaining 2 tablespoons olive oil to the same skillet. Toss in 8 ounces sliced mushrooms and 2 minced garlic cloves. Sauté for 4-5 minutes until mushrooms release moisture and turn golden.
- Pour 1 cup Marsala wine and 1 cup chicken broth into the skillet. Scrape up all browned bits from pan bottom. Reduce liquid by half over medium heat for 6-7 minutes.
- Drop 2 tablespoons cold butter into the sauce. Swirl until butter melts completely and sauce thickens slightly.
- Return chicken to skillet, nestling pieces into the sauce. Spoon sauce over chicken and warm for 2-3 minutes.
- Sprinkle 2 tablespoons fresh chopped parsley over the dish just before serving.
