Description

Shepherds Pie from the rolling hills of United Kingdom brings comfort straight to your dinner table with layers of seasoned ground lamb and creamy mashed potatoes. Rich beef stock and tender vegetables make this classic dish a weeknight favorite that warms your heart and satisfies your hunger.

Ingredients

Scale

Main Ingredients:

  • 1 pound ground lamb or beef
  • 2 pounds potatoes, peeled and cut into chunks
  • 1 cup frozen peas

Vegetable Base:

  • 1 medium onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 cloves garlic, minced

Seasonings and Liquids:

  • 1 tablespoon olive oil
  • 2 tablespoons tomato paste
  • ½ cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 4 tablespoons butter
  • ½ cup milk
  • ½ cup shredded cheddar cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Warm the olive oil in a large skillet at medium heat for 1-2 minutes. Sauté the finely chopped onion for 2-3 minutes until softened.
  2. Add minced garlic and cook for 30-45 seconds until fragrant. Smell the aromatic mixture developing.
  3. Incorporate 1 pound ground lamb or beef into the skillet. Break the meat apart using a wooden spoon and cook for 6-8 minutes until completely browned.
  4. Drain excess fat from the meat if necessary. This keeps your dish from becoming greasy.
  5. Introduce 2 diced carrots, 2 tablespoons tomato paste, 1 tablespoon Worcestershire sauce, 1 teaspoon dried thyme, salt, and pepper to the skillet.
  6. Pour ½ cup beef broth into the meat mixture. Stir thoroughly to combine all ingredients.
  7. Simmer the meat filling for 10-15 minutes until carrots become tender and sauce slightly thickens.
  8. Fold 1 cup frozen peas into the filling during the last 5 minutes of cooking.
  9. Meanwhile, place 2 pounds peeled potato chunks in a large saucepan. Cover completely with cold water.
  10. Bring potatoes to a rolling boil over high heat. Cook for 15-20 minutes until fork-tender.
  11. Drain potatoes completely. Return to the saucepan immediately.
  12. Add 4 tablespoons butter, ½ cup milk, and salt to the potatoes. Mash until smooth and creamy.
  13. Preheat the oven to 400°F. Spread meat mixture evenly across a 9×13 baking dish.
  14. Carefully spoon mashed potatoes over the meat, creating a complete covering layer.
  15. Optional: Sprinkle ½ cup shredded cheddar cheese across the potato surface.
  16. Bake for 20-25 minutes until the top turns golden and edges bubble slightly.
  17. For extra crispiness, broil for 2-3 minutes – watch carefully to prevent burning.
  18. Rest the shepherd’s pie for 5-10 minutes before serving. This helps it set and makes cutting easier.

Notes

  • Using lean ground meat helps reduce excess grease in the final dish.
  • Grate your potatoes instead of mashing for an extra smooth and creamy topping.
  • Swap lamb for ground turkey or plant-based crumbles to make the recipe more diet-friendly.
  • Add a splash of red wine to the meat mixture for deeper, richer flavor complexity.
