Instructions
- Slice bell peppers into ½-inch thick strips. Cut onion into similar-sized pieces. Mince garlic finely.
- Pat chicken breasts completely dry with paper towels. Generously season both sides with 1 teaspoon smoked paprika, ½ teaspoon cumin, salt, and pepper.
- Heat a large skillet to 375°F. Add 1 tablespoon vegetable oil and swirl to coat the pan surface.
- Place seasoned chicken breasts into hot skillet. Cook 4-5 minutes on first side until golden brown with crisp edges.
- Flip chicken and cook additional 4-5 minutes until internal temperature reaches 165°F. Transfer chicken to cutting board and let rest 3 minutes.
- Using same skillet, pour remaining 1 tablespoon oil. Add bell peppers and onions. Sauté for 8-10 minutes, stirring every 2 minutes to create charred edges.
- Sprinkle minced garlic into skillet. Stir continuously for 30 seconds until aromatic but not burned.
- Slice rested chicken into ¼-inch diagonal strips. Return meat to skillet with vegetables.
- Squeeze entire lime’s juice over mixture. Toss gently to combine and warm for 2 additional minutes.
- Warm tortillas in separate dry skillet for 30 seconds per side. Serve immediately with fresh fajita mixture.
