Skillet huevos rancheros bring bold Mexican breakfast flavors straight to your morning table with crispy tortillas, runny eggs, and zesty salsa that’ll wake up your taste buds. Warm, hearty, and packed with protein, this dish turns your kitchen into a quick Mexican cafe experience.

Ingredients

Scale

Main Ingredients:

  • 4 large eggs
  • 4 corn or flour tortillas
  • 1 can (14 oz) diced tomatoes
  • 1 avocado
  • ½ cup crumbled queso fresco or feta cheese

Supporting Ingredients:

  • 1 small onion
  • 1 bell pepper
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika

Garnishes and Seasonings:

  • ¼ cup fresh cilantro
  • Salt and pepper
  • Sour cream or Greek yogurt
  • Lime wedges

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Sauté 1 diced small onion until translucent, about 3-4 minutes.
  2. Add 2 minced garlic cloves and 1 diced bell pepper. Cook for another 2 minutes until vegetables soften.
  3. Pour 1 can of diced tomatoes into the skillet. Stir in 1 teaspoon cumin, 1 teaspoon chili powder, and ½ teaspoon smoked paprika.
  4. Simmer the sauce for 10 minutes, stirring occasionally. Season with salt and pepper to taste.
  5. Create four small wells in the sauce using the back of a spoon.
  6. Crack 1 large egg into each well. Cover the skillet and cook for 4-5 minutes at medium-low heat until egg whites are set.
  7. Warm 4 tortillas in a separate dry skillet for 30 seconds on each side.
  8. Place a warm tortilla on each plate. Carefully transfer an egg with sauce onto each tortilla.
  9. Top with sliced avocado, 2 tablespoons crumbled queso fresco, and a dollop of sour cream.
  10. Garnish with chopped fresh cilantro and serve with lime wedges on the side.

Notes

  • Roast the chiles and tomatoes until slightly charred for deeper, smokier sauce flavor.
  • Use fresh corn tortillas for the best texture and authentic taste.
  • Warm your tortillas on the skillet before assembling to prevent them from getting soggy.
  • For a lighter version, swap refried beans for black beans and use less cheese.
