Description

Sizzling Chicken Fajitas bring pure Mexican-inspired dinner magic right to your kitchen table. Tender chicken, colorful peppers, and zesty spices combine for a quick weeknight meal that sparks excitement at dinnertime.

Ingredients

Scale

Proteins:

  • 2 large boneless, skinless chicken breasts

Vegetables:

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 medium onion

Seasonings and Oils:

  • 2 tablespoons olive oil
  • 2 teaspoons lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Serving Accompaniments:

  • Warm flour or corn tortillas
  • Fresh cilantro
  • Sour cream
  • Guacamole
  • Salsa

Instructions

  1. Whisk 15 milliliters (1 tablespoon) olive oil, 10 milliliters (2 teaspoons) lime juice, and all dry spices in a medium bowl. Thoroughly coat 2 chicken breasts, sliced into thin strips. Let marinate at room temperature for 15-60 minutes.
  2. Preheat a large skillet to 205°C (400°F) over medium-high heat. Add 15 milliliters (1 tablespoon) olive oil. Sauté chicken for 5-6 minutes, stirring every 90 seconds until golden brown and internal temperature reaches 74°C (165°F). Remove chicken to a clean plate.
  3. In the same skillet, add another drizzle of olive oil. Sauté 1 sliced red, 1 yellow, and 1 green bell pepper with 1 sliced medium onion. Sprinkle with 2.5 grams (½ teaspoon) salt. Cook 5 minutes until vegetables are tender-crisp.
  4. Splash 5 milliliters (1 teaspoon) lime juice over vegetables. Return chicken to skillet and toss everything together for 1 minute to reheat.
  5. Serve hot with warm tortillas, fresh cilantro, sour cream, guacamole, and salsa on the side.

Notes

  • Let the chicken marinate for at least 30 minutes to develop deep, rich flavors that soak into every fiber.
  • When slicing bell peppers and onions, keep them roughly the same size so they cook evenly and look beautiful on the plate.
  • Use a cast-iron skillet or heavy griddle to get those perfect sear marks and caramelized edges on your chicken and vegetables.
  • For a low-carb version, serve the fajita mixture over cauliflower rice or wrap in large lettuce leaves instead of tortillas.
