Instructions

  1. Slice two chicken breasts lengthwise into 2-3 thinner pieces. Cover with plastic wrap and pound to ½ inch thickness using the textured side of a meat mallet.
  2. Pat chicken completely dry. Sprinkle each side with 1½ teaspoons Italian seasoning, salt, and pepper.
  3. Mix ⅓ cup flour with 4 tablespoons shredded Parmesan cheese on a plate. Dredge each chicken piece, tapping off excess coating.
  4. Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Transfer chicken to a separate plate.
  5. Reduce skillet heat to medium-low. Melt 3 tablespoons butter, scraping bottom of pan to capture browned bits.
  6. Add 10 whole garlic cloves and let them soften and caramelize for 6-7 minutes.
  7. Sprinkle 3 tablespoons flour into the skillet. Cook for 1-2 minutes until raw flour smell disappears.
  8. Slowly pour 2½ cups chicken broth mixture into skillet, stirring continuously to prevent lumps.
  9. Stir ½ cup heavy cream into the sauce. Bring to a boil, then reduce heat to low.
  10. Gradually whisk in ½ cup Parmesan cheese until smooth.
  11. Return chicken to skillet with accumulated juices. Spoon sauce over chicken.
  12. Cover partially and simmer for 5 minutes to blend flavors and finish cooking chicken.
  13. Serve hot with a sprinkle of fresh parsley alongside mashed potatoes and roasted green beans.
