Ingredients
Scale
Protein:
- 2 large boneless skinless chicken breasts
Coating:
- ⅓ cup flour
- 4 tablespoons Parmesan cheese
- 3 teaspoons Italian seasonings
Cooking Base:
- 3 tablespoons olive oil
- 10 whole cloves garlic
- 3 tablespoons butter
- 3 tablespoons flour
- 2 ½ cups chicken broth
- 1 beef bouillon cube
- 1 teaspoon low sodium soy sauce
- 1 teaspoon onion powder
- ½ teaspoon dried thyme
- ½ teaspoon mustard powder
- ½ cup heavy cream
- ½ cup Parmesan cheese
- Salt
- Pepper
Instructions
- Slice two chicken breasts lengthwise into 2-3 thinner pieces. Cover with plastic wrap and pound to ½ inch thickness using the textured side of a meat mallet.
- Pat chicken completely dry. Sprinkle each side with 1½ teaspoons Italian seasoning, salt, and pepper.
- Mix ⅓ cup flour with 4 tablespoons shredded Parmesan cheese on a plate. Dredge each chicken piece, tapping off excess coating.
- Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Transfer chicken to a separate plate.
- Reduce skillet heat to medium-low. Melt 3 tablespoons butter, scraping bottom of pan to capture browned bits.
- Add 10 whole garlic cloves and let them soften and caramelize for 6-7 minutes.
- Sprinkle 3 tablespoons flour into the skillet. Cook for 1-2 minutes until raw flour smell disappears.
- Slowly pour 2½ cups chicken broth mixture into skillet, stirring continuously to prevent lumps.
- Stir ½ cup heavy cream into the sauce. Bring to a boil, then reduce heat to low.
- Gradually whisk in ½ cup Parmesan cheese until smooth.
- Return chicken to skillet with accumulated juices. Spoon sauce over chicken.
- Cover partially and simmer for 5 minutes to blend flavors and finish cooking chicken.
- Serve hot with a sprinkle of fresh parsley alongside mashed potatoes and roasted green beans.
Notes
- Pounding the chicken to an even thickness helps it cook uniformly and stay tender throughout.
- Drying the chicken completely before seasoning and dredging ensures a crispy, golden crust that seals in moisture.
- Caramelizing the garlic slowly develops a deep, rich flavor that becomes the foundation of the creamy sauce.
- When adding cheese to the sauce, stir gradually and keep the heat low to prevent separation and maintain a smooth texture.
