Description

Sizzling shrimp fajitas bring a taste of Mexico right to your dinner table, packed with zesty flavors that dance across your palate. Grab some tortillas and get ready to roll up a mouthwatering meal that’ll have your family asking for seconds.

Ingredients

Scale

Main Ingredients:

  • 1 lb large shrimp
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 medium yellow onion
  • 4 flour tortillas

Supporting Ingredients:

  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika

Flavor Enhancers:

  • Juice of 2 limes
  • Salt to taste
  • Fresh cilantro

Instructions

  1. Pour 2 tbsp olive oil into a large skillet and heat over medium-high heat. Toss the marinated shrimp with 2 tsp cumin, 2 tsp chili powder, 1 tsp smoked paprika, and fresh lime juice from 2 limes for maximum flavor.
  2. Slide sliced onions into the hot skillet and cook until they become translucent, approximately 3 minutes. Your goal is a soft, slightly golden texture without burning.
  3. Add 1 red, 1 yellow, and 1 green bell pepper slices to the skillet. Sauté for 2-3 minutes until the peppers reach a crisp-tender consistency.
  4. Push the vegetables to one side of the skillet and add the seasoned shrimp. Cook for 3-4 minutes, stirring occasionally, until the shrimp turn completely pink and opaque.
  5. Preheat your oven to 350°F. Wrap 4 flour tortillas in aluminum foil and warm them for 5 minutes until softened and pliable.
  6. Transfer the warm tortillas to serving plates. Spoon the sautéed vegetables and shrimp onto each tortilla. Sprinkle fresh chopped cilantro over the top for a bright, herbal finish.

Notes

  • Choose large or jumbo shrimp for the best texture and flavor in your fajitas.
  • Marinate the shrimp for no longer than 30 minutes, or the acid will start to break down the delicate protein.
  • Heat your skillet until it’s really hot to get a nice sear on the shrimp and vegetables, which adds deep flavor.
  • Keep tortillas wrapped in foil after warming to maintain their soft, pliable texture while serving.
