Ingredients

Scale

Main Proteins:

  • 4 bone-in, skin-on chicken thighs

Seasonings:

  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika

Cooking Liquids and Supporting Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 cup sliced mushrooms
  • Fresh parsley, chopped

Instructions

  1. Pat 4 chicken thighs completely dry using paper towels to ensure crispy skin.
  2. Combine 1 teaspoon salt, ½ teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder in a small bowl. Thoroughly coat chicken thighs with this seasoning mixture.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat at 375°F. Place chicken thighs skin-side down and sear for 6 minutes until golden and crisp.
  4. Flip chicken thighs and cook an additional 5 minutes. Transfer chicken to a separate plate, keeping the skillet with remaining oil and drippings.
  5. Add 1 sliced medium onion to the skillet. Saute for 4 minutes until edges become translucent.
  6. Introduce 3 minced garlic cloves and 1 cup sliced mushrooms to the skillet. Cook 3 minutes, stirring constantly.
  7. Pour 1 cup chicken broth into the skillet, scraping bottom to release caramelized bits.
  8. Stir in 1 cup heavy cream, 1 tablespoon Worcestershire sauce, 1 teaspoon dried thyme, and 1 teaspoon smoked paprika. Bring sauce to a gentle simmer.
  9. Return chicken thighs to the skillet, positioning them skin-side up in the sauce.
  10. Reduce heat to low, cover skillet, and simmer for 30 minutes at 250°F.
  11. Check chicken internal temperature. Continue cooking an additional 5-10 minutes if needed.
  12. Remove lid and let sauce reduce for 5 minutes, allowing it to thicken slightly.
  13. Taste sauce and adjust seasonings as desired.
  14. Garnish with 2 tablespoons freshly chopped parsley before serving.
  15. Serve immediately with your favorite side dish, spooning sauce generously over chicken.

Notes

  • Always pat chicken thighs completely dry to ensure crispy, golden-brown skin that seals in delicious flavor.
  • Use a heavy-bottomed skillet or Dutch oven to get an even, consistent sear and develop deep, rich flavors in the sauce.
  • For a lower-fat version, swap heavy cream with half-and-half or coconut milk, and use skinless chicken thighs to reduce calories.
  • When reheating leftovers, add a splash of chicken broth to keep the sauce creamy and prevent the chicken from drying out.
