Instructions

- Use paper towels to completely dry your 4 bone-in pork chops.
- Thoroughly coat each pork chop in the seasoned flour mixture, ensuring full coverage.
- Heat ¼ cup vegetable oil in a large cast-iron skillet over medium-high heat at 375°F.
- Gently place floured pork chops into the hot skillet, cooking 4-5 minutes until golden brown on first side.
- Flip pork chops and cook additional 4-5 minutes until second side reaches same golden color.
- Transfer browned pork chops to a clean plate, keeping warm.
- Slice 2 large onions into thin rings in the same hot skillet.
- Sauté onion rings for 5-7 minutes at medium heat until soft and caramelized.
- Pour 2 cups chicken broth into skillet, scraping bottom to release all browned bits.
- Carefully return pork chops to skillet and reduce heat to low, around 250°F.
- Cover and simmer 20-25 minutes until pork chops become fork-tender.
- Stir in ¼ cup heavy cream and 1 tbsp butter during final 2 minutes of cooking.
- Remove from heat and sprinkle with 2 tbsp fresh chopped parsley.
- Allow dish to rest 5 minutes before serving to let flavors meld together.
