Instructions
- Salt your green tomato slices with 1 teaspoon salt and let them rest on a paper towel for 15 minutes. Pat completely dry with fresh paper towels.
- Create three separate shallow dishes: first with ½ cup flour, second with 2 large eggs whisked with ¼ cup buttermilk, third with mixture of ½ cup cornmeal, ½ cup panko, ½ teaspoon garlic powder, ½ teaspoon smoked paprika, and ¼ teaspoon black pepper.
- Dredge each tomato slice first through flour, then egg mixture, then cornmeal-panko blend. Press coating gently to ensure it adheres.
- Preheat air fryer to 400°F. Lightly spray tomato slices with olive oil on both sides.
- Arrange breaded tomato slices in single layer inside air fryer basket. Cook for 8-10 minutes, flipping midway through until exterior turns golden and crispy.
- Transfer hot tomato slices to serving plate. Serve immediately with optional remoulade sauce made from ½ cup mayonnaise, 1 tablespoon Dijon mustard, and additional condiments.
