- 2 large eggs
- 2 slices American cheese
Bread and Base:
- 2 plain or everything bagels
- 1 tablespoon butter
- 1 tablespoon mayonnaise (optional)
Seasonings and Extras:
- 1 teaspoon onion powder or garlic powder (optional)
- Salt
- Black pepper
- Optional: sauteed onions
- Optional: mushrooms
- Optional: hot sauce
- Optional: baby spinach
Instructions
- Slice 2 plain or everything bagels in half. Toast at 350°F (175°C) for 2-3 minutes until golden brown edges appear. Set aside on a plate.
- Warm a skillet to medium-high heat. Add ½ tablespoon butter and let it melt completely.
- Sprinkle 6 oz (170g) steak slices with ½ teaspoon salt, ¼ teaspoon black pepper, and optional ½ teaspoon garlic powder.
- Sear steak slices for exactly 2 minutes per side at 400°F (205°C). Ensure a nice brown crust develops. Transfer to a warm plate.
- Return skillet to medium heat. Add remaining ½ tablespoon butter and let it coat the surface.
- Crack 2 large eggs directly into the skillet. Cook for 2 minutes for over-easy or 3 minutes for scrambled.
- Sprinkle eggs with pinch of salt and pepper. Add 1 slice of American cheese on top of each egg.
- Cover skillet for 30 seconds at low heat to allow cheese to melt smoothly.
- Optional: Spread 1 tablespoon mayonnaise on toasted bagel halves for extra richness.
- Assemble sandwich by layering steak, cheesy egg, and any additional ingredients like sauteed onions.
- Press top bagel half gently to compress sandwich. Slice diagonally if desired.
- Serve immediately while ingredients are hot and cheese is melted.
Notes
- Toast the bagels until they’re deeply golden for extra crunch and flavor enhancement.
- Season the steak generously with spices to build layers of robust taste before searing.
- Cooking the eggs in the same skillet as the steak captures delicious browned bits and adds deeper flavor to your breakfast sandwich.
- When melting cheese, covering the skillet creates steam that helps it melt smoothly and evenly without drying out the eggs.
