Ingredients
Scale
Protein:
- 225 g ground pork or beef
Main Vegetables:
- 450 g potatoes
- 80 g green bell pepper
Seasonings and Sauces:
- 30 ml soy sauce
- 15 ml oyster sauce
- 15 ml vegetable oil
- 5 ml sesame oil
- 8 g cornstarch
- 1 clove garlic
- 2.5 cm piece fresh ginger
- Salt
- Black pepper
Instructions
- Boil 2 cups of salted water at 212°F. Add 2 cups of potato cubes and simmer for 5-7 minutes until slightly tender. Drain your potatoes completely.
- Heat 1 tablespoon vegetable oil in a wok at medium-high heat (375°F). Add ½ pound ground pork and cook until thoroughly browned, stirring constantly.
- Drain excess fat from the meat. Mince 1 garlic clove and 1-inch ginger piece. Sauté these aromatics for 30 seconds until fragrant.
- Introduce your parboiled potato cubes to the wok. Stir-fry for 5 minutes until edges turn golden brown.
- Slice ½ green bell pepper and add to the wok. Stir-fry an additional 2 minutes until peppers soften slightly.
- Whisk 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and 1 teaspoon cornstarch in a small bowl until completely smooth.
- Pour sauce mixture over your potato and meat blend. Stir-fry for 1-2 minutes until sauce coats everything evenly and thickens.
- Drizzle 1 teaspoon sesame oil over the dish. Sprinkle with salt and black pepper to your taste preference.
- Transfer immediately to serving plates while piping hot.
Notes
- Parboiling the potatoes ensures they’re perfectly cooked without becoming mushy, giving you a nice texture with crisp edges.
- Drain the meat thoroughly to prevent excess grease, which can make the dish heavy and less appealing.
- For a gluten-free version, use tamari instead of soy sauce and ensure your oyster sauce is gluten-free.
- Vegetarian friends can swap ground meat with crumbled tofu or plant-based ground meat alternative for a protein-packed meal.
