  • 8 g cornstarch

  • 2.5 cm piece fresh ginger

Instructions

  1. Boil 2 cups of salted water at 212°F. Add 2 cups of potato cubes and simmer for 5-7 minutes until slightly tender. Drain your potatoes completely.
  2. Heat 1 tablespoon vegetable oil in a wok at medium-high heat (375°F). Add ½ pound ground pork and cook until thoroughly browned, stirring constantly.
  3. Drain excess fat from the meat. Mince 1 garlic clove and 1-inch ginger piece. Sauté these aromatics for 30 seconds until fragrant.
  4. Introduce your parboiled potato cubes to the wok. Stir-fry for 5 minutes until edges turn golden brown.
  5. Slice ½ green bell pepper and add to the wok. Stir-fry an additional 2 minutes until peppers soften slightly.
  6. Whisk 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and 1 teaspoon cornstarch in a small bowl until completely smooth.
  7. Pour sauce mixture over your potato and meat blend. Stir-fry for 1-2 minutes until sauce coats everything evenly and thickens.
  8. Drizzle 1 teaspoon sesame oil over the dish. Sprinkle with salt and black pepper to your taste preference.
  9. Transfer immediately to serving plates while piping hot.
