- Continue stirring until the mixture reaches a vigorous, rolling boil that cannot be stopped by stirring.
- Maintain the hard boil for exactly 1 minute, keeping your arm moving continuously to prevent scorching.
- Remove the pot from heat and quickly skim any white foam from the surface using a metal spoon.
- Using a clean ladle, carefully fill each jar with hot jam, leaving ¼ inch of space at the top.
- Wipe jar rims with a damp, clean cloth to ensure a proper seal.
- Screw lids and rings onto jars firmly but not overly tight.
- Lower filled jars into a boiling water canner, ensuring they are completely submerged by 1-2 inches of water.
- Process jars for 10 minutes, adjusting time if you are at a high altitude.
- Carefully remove jars and place on a towel-lined counter, allowing them to cool and seal naturally.
- After 24 hours, check that each jar’s lid has sealed by pressing the center – it should not flex.
