- Pat 2 pounds chicken thighs completely dry with paper towels.
- Mix 1 teaspoon salt, ½ teaspoon black pepper, and ½ teaspoon chili powder in a small bowl.
- Sprinkle the seasoning blend evenly across both sides of your chicken thighs.
- Heat 2 tablespoons olive oil in a large nonstick skillet over medium heat for 2 minutes.
- Place seasoned chicken thighs into the hot skillet, cooking 5 minutes until golden brown on the first side.
- Flip chicken, reduce heat to medium-low, and cook another 5 minutes until internal temperature reaches 165°F.
- Transfer chicken to a plate and cover loosely with aluminum foil to keep warm.

- Add sliced peaches to the skillet, cooking 3 minutes until they start caramelizing.
- Pour prepared peach glaze into skillet, stirring to coat peppers and peaches evenly.
- Return chicken to skillet, spooning glaze over each piece and heating 1-2 minutes.
