Instructions

  1. Whisk 160 g peach preserves, 1 tablespoon olive oil, soy sauce, vinegar, mustard, minced garlic, ½ teaspoon salt, black pepper, and red pepper flakes in a medium bowl until smooth.
  2. Pat 2 pounds chicken thighs completely dry with paper towels.
  3. Mix 1 teaspoon salt, ½ teaspoon black pepper, and ½ teaspoon chili powder in a small bowl.
  4. Sprinkle the seasoning blend evenly across both sides of your chicken thighs.
  5. Heat 2 tablespoons olive oil in a large nonstick skillet over medium heat for 2 minutes.
  6. Place seasoned chicken thighs into the hot skillet, cooking 5 minutes until golden brown on the first side.
  7. Flip chicken, reduce heat to medium-low, and cook another 5 minutes until internal temperature reaches 165°F.
  8. Transfer chicken to a plate and cover loosely with aluminum foil to keep warm.
  9. Raise skillet heat to medium and add thinly sliced jalapeno peppers, cooking 3 minutes until slightly softened.
  10. Add sliced peaches to the skillet, cooking 3 minutes until they start caramelizing.
  11. Pour prepared peach glaze into skillet, stirring to coat peppers and peaches evenly.
  12. Return chicken to skillet, spooning glaze over each piece and heating 1-2 minutes.
  13. Serve immediately while glaze is warm and chicken remains juicy.
