- Blend in 1 finely chopped onion, 2 minced garlic cloves, ½ teaspoon cumin, ½ teaspoon smoked paprika, ¼ teaspoon turmeric, salt, pepper, and ¼ cup chopped parsley.
- Incorporate ¼ cup chickpea flour to help bind the mixture. Add more flour by tablespoon if the mixture feels too wet.
- Form 8-10 patties about 2.5 inches wide and ½ inch thick with clean hands. Refrigerate for 15-20 minutes to set.
- Whisk ⅓ cup tahini, 2 tablespoons lemon juice, 1 tablespoon apple cider vinegar, 1 teaspoon maple syrup, 1 grated garlic clove, salt, and cayenne. Thin with 2-4 tablespoons water until pourable.
- Heat 2 tablespoons olive oil in a non-stick skillet at medium heat. Fry patties for 3-4 minutes per side until golden and crisp.
- Top patties with tahini dressing, green onions, and fresh herbs. Serve immediately with lemon wedges.
