Red potato patties with lentils tantalize taste buds with their hearty Mediterranean-inspired flavors. Creamy tahini dressing drizzled over golden patties creates a simple, satisfying meal perfect for your weeknight dinner.

Ingredients

Scale

Main Ingredients:

  • 2 sweet potatoes
  • ½ cup red lentils
  • ¼ cup chickpea flour

Seasonings and Aromatics:

  • 1 small onion
  • 2 cloves garlic
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground turmeric
  • Salt and pepper
  • ¼ cup fresh parsley

Dressing and Cooking Ingredients:

  • 2 tablespoons olive oil
  • ⅓ cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon maple syrup
  • 1 garlic clove
  • 24 tablespoons water
  • Pinch of cayenne pepper
  • Sliced green onions
  • Chopped fresh herbs
  • Extra tahini
  • Lemon wedges

Instructions

  1. Boil 1 ½ pounds diced sweet potatoes and ½ cup red lentils in water for 15-18 minutes until tender. Drain and let cool for 5-10 minutes.
  2. Mash the sweet potatoes and lentils in a large bowl using a fork, leaving some chunky texture.
  3. Blend in 1 finely chopped onion, 2 minced garlic cloves, ½ teaspoon cumin, ½ teaspoon smoked paprika, ¼ teaspoon turmeric, salt, pepper, and ¼ cup chopped parsley.
  4. Incorporate ¼ cup chickpea flour to help bind the mixture. Add more flour by tablespoon if the mixture feels too wet.
  5. Form 8-10 patties about 2.5 inches wide and ½ inch thick with clean hands. Refrigerate for 15-20 minutes to set.
  6. Whisk ⅓ cup tahini, 2 tablespoons lemon juice, 1 tablespoon apple cider vinegar, 1 teaspoon maple syrup, 1 grated garlic clove, salt, and cayenne. Thin with 2-4 tablespoons water until pourable.
  7. Heat 2 tablespoons olive oil in a non-stick skillet at medium heat. Fry patties for 3-4 minutes per side until golden and crisp.
  8. Top patties with tahini dressing, green onions, and fresh herbs. Serve immediately with lemon wedges.

Notes

  • Chilling the patties helps them hold together better during cooking, preventing them from falling apart in the skillet.
  • Adjust the chickpea flour carefully to get the right consistency—too little makes the patties crumbly, while too much can make them dense.
  • The tahini dressing is versatile and works great as a dip or sauce for other roasted vegetables and grain bowls.
  • For a gluten-free version, ensure your chickpea flour is certified gluten-free and avoid cross-contamination in your kitchen.
