Ingredients
Scale
Main Ingredients:
- 1 cup red lentils
- 1 medium sweet potato
- 1 small onion
- 2 garlic cloves
Supporting Ingredients:
- ½ teaspoon cumin
- ½ teaspoon paprika
- ¼ teaspoon ground coriander
- ¼ cup chopped fresh cilantro
- 2 tablespoons flour
- Salt and pepper
Sauce Ingredients:
- 1 ripe avocado
- ½ cup fresh cilantro
- 1 garlic clove
- 1 tablespoon lime juice
- 2 tablespoons plain yogurt
- Salt
- 2–3 tablespoons water
- Olive oil
Instructions
- Rinse 1 cup red lentils thoroughly. Pour into a saucepan with 2 cups water. Boil at high heat, then reduce to a simmer for 10-12 minutes until tender and liquid is nearly absorbed.
- Drain lentils and let cool for 5 minutes. Transfer to a large mixing bowl with your grated sweet potato, finely chopped onion, and minced garlic.
- Sprinkle ½ teaspoon cumin, ½ teaspoon paprika, ¼ teaspoon coriander, salt, and pepper into the bowl. Add ¼ cup chopped cilantro and 2 tablespoons flour.
- Mix ingredients thoroughly until the mixture feels compact and sticky. Allow the mixture to rest for 7-8 minutes so ingredients can bind together.
- Warm a skillet over medium heat. Drizzle 2 tablespoons olive oil across the surface.
- Shape mixture into small 2-inch patties, about ¼ cup per patty. Carefully place patties into the hot skillet.
- Cook patties for 3-4 minutes on each side until a crispy golden-brown crust forms. Maintain medium heat around 350°F during cooking.
- Blend 1 ripe avocado, ½ cup cilantro, 1 garlic clove, 1 tablespoon lime juice, 2 tablespoons yogurt, and salt in a food processor.
- Add 2-3 tablespoons water to thin the sauce to your preferred consistency. Pulse until smooth and creamy.
- Plate warm patties and serve immediately with the fresh avocado sauce for dipping.
Notes
- Let the lentil mixture rest before forming patties to help them hold together better during cooking.
- Use a non-stick skillet or cast-iron pan to achieve the crispiest exterior without sticking.
- For a gluten-free version, swap wheat flour with chickpea flour or almond flour to bind the patties.
- Make extra patties and freeze them between parchment paper for quick future meals that reheat beautifully in a toaster oven.
