Description

Whipping up crispy sweet potato red lentil patties with creamy avocado sauce delivers a protein-packed meal that’ll make your taste buds dance. These golden-brown patties blend earthy lentils and sweet potato into a satisfying dinner your whole family will devour.

Ingredients

Scale

Main Ingredients:

  • 1 cup red lentils
  • 1 medium sweet potato
  • 1 small onion
  • 2 garlic cloves

Supporting Ingredients:

  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon ground coriander
  • ¼ cup chopped fresh cilantro
  • 2 tablespoons flour
  • Salt and pepper

Sauce Ingredients:

  • 1 ripe avocado
  • ½ cup fresh cilantro
  • 1 garlic clove
  • 1 tablespoon lime juice
  • 2 tablespoons plain yogurt
  • Salt
  • 23 tablespoons water
  • Olive oil

Instructions

  1. Rinse 1 cup red lentils thoroughly. Pour into a saucepan with 2 cups water. Boil at high heat, then reduce to a simmer for 10-12 minutes until tender and liquid is nearly absorbed.
  2. Drain lentils and let cool for 5 minutes. Transfer to a large mixing bowl with your grated sweet potato, finely chopped onion, and minced garlic.
  3. Sprinkle ½ teaspoon cumin, ½ teaspoon paprika, ¼ teaspoon coriander, salt, and pepper into the bowl. Add ¼ cup chopped cilantro and 2 tablespoons flour.
  4. Mix ingredients thoroughly until the mixture feels compact and sticky. Allow the mixture to rest for 7-8 minutes so ingredients can bind together.
  5. Warm a skillet over medium heat. Drizzle 2 tablespoons olive oil across the surface.
  6. Shape mixture into small 2-inch patties, about ¼ cup per patty. Carefully place patties into the hot skillet.
  7. Cook patties for 3-4 minutes on each side until a crispy golden-brown crust forms. Maintain medium heat around 350°F during cooking.
  8. Blend 1 ripe avocado, ½ cup cilantro, 1 garlic clove, 1 tablespoon lime juice, 2 tablespoons yogurt, and salt in a food processor.
  9. Add 2-3 tablespoons water to thin the sauce to your preferred consistency. Pulse until smooth and creamy.
  10. Plate warm patties and serve immediately with the fresh avocado sauce for dipping.

Notes

  • Let the lentil mixture rest before forming patties to help them hold together better during cooking.
  • Use a non-stick skillet or cast-iron pan to achieve the crispiest exterior without sticking.
  • For a gluten-free version, swap wheat flour with chickpea flour or almond flour to bind the patties.
  • Make extra patties and freeze them between parchment paper for quick future meals that reheat beautifully in a toaster oven.
