Instructions
- Marinate chicken cubes with 3 sliced scallions, 2 tablespoons sugar, 1 tablespoon sesame oil, 1.5 tablespoons garlic-ginger paste, 1 tablespoon dry sherry, 1 teaspoon cornstarch, salt, and pepper. Let sit for 15 minutes.
- Whisk 1 tablespoon cornstarch with ½ cup water in a separate small bowl. Set aside for sauce thickening.
- Heat vegetable oil in a skillet at high heat (425°F). Quickly stir-fry 4-5 cups broccoli florets for 30 seconds. Sprinkle with salt, pepper, and add 1.5 tablespoons water and extra garlic-ginger paste.
- Remove broccoli from skillet and set aside. Keep broccoli crisp and bright green to maintain texture.
- In the same skillet, add more vegetable oil. Cook marinated chicken with 1 teaspoon red chili flakes over medium-high heat (375°F) for 5 minutes until color changes.
- Add 1 tablespoon hoisin sauce, reserved broccoli, and cornstarch-water mixture to chicken. Stir thoroughly to combine.
- Adjust sauce consistency with additional water if needed. Taste and season with extra salt and pepper. Garnish with sesame seeds if desired.
