Description

Blackstone fried rice became my weekend warrior meal that saves dinner when time runs short. Crispy veggies, scrambled eggs, and tender rice come together in one sizzling skillet for a quick, satisfying meal that beats takeout any day.

Ingredients

Scale

Primary Ingredients:

  • 4 cups rice
  • 2 eggs
  • 1 cup frozen peas and carrots mix
  • 1 cup diced onion
  • 2 cloves garlic

Supporting Ingredients:

  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon butter

Seasoning Ingredients:

  • ½ teaspoon black pepper

Optional Protein:

  • Cooked chicken
  • Cooked shrimp
  • Cooked steak
  • Cooked tofu

Instructions

  1. Prepare your Blackstone griddle by heating it to 400°F (204°C). Ensure the surface is evenly warm and ready for cooking.
  2. Crack 2 large eggs into a small bowl. Whisk thoroughly until completely blended and slightly frothy.
  3. Pour 1 tablespoon vegetable oil onto the griddle. Pour whisked eggs onto the hot surface and create soft scrambled eggs. Move eggs to one side of the cooking area.
  4. Add 1 tablespoon butter to the griddle. Immediately toss in 1 cup diced onions, 1 cup frozen peas and carrots. Sauté for 3-4 minutes until vegetables soften and onions become translucent.
  5. Mince 2 garlic cloves and sprinkle them across the vegetables. Stir quickly for 30 seconds to release aromatic flavors without burning.
  6. Spread 4 cups cold rice across the griddle surface. Allow rice to sear for 2-3 minutes without stirring, creating crispy golden edges.
  7. Drizzle 2 tablespoons sesame oil and 3 tablespoons soy sauce over the rice. Use a flat spatula to gently fold and coat the grains evenly.
  8. Incorporate scrambled eggs, sautéed vegetables, and optional 1 cup protein (chicken, shrimp, or tofu). Sprinkle ½ teaspoon black pepper across the mixture.
  9. Continue cooking and folding ingredients for an additional 2-3 minutes until everything is heated through and well combined.
  10. Transfer rice mixture to serving plates. Garnish with chopped green onions if desired. Serve immediately while hot and crispy.

Notes

  • Chilled rice works best for achieving crispy, separated grains that won’t turn mushy during cooking.
  • Prep all ingredients beforehand since griddle cooking moves quickly and requires constant attention.
  • Using a metal spatula helps scrape and flip ingredients effectively on the Blackstone surface without damaging the griddle.
  • Experiment with different proteins like shrimp, chicken, or tofu to customize the fried rice to your preferences.
