Instructions
- Prepare your Blackstone griddle by heating it to 400°F (204°C). Ensure the surface is evenly warm and ready for cooking.
- Crack 2 large eggs into a small bowl. Whisk thoroughly until completely blended and slightly frothy.
- Pour 1 tablespoon vegetable oil onto the griddle. Pour whisked eggs onto the hot surface and create soft scrambled eggs. Move eggs to one side of the cooking area.
- Add 1 tablespoon butter to the griddle. Immediately toss in 1 cup diced onions, 1 cup frozen peas and carrots. Sauté for 3-4 minutes until vegetables soften and onions become translucent.
- Mince 2 garlic cloves and sprinkle them across the vegetables. Stir quickly for 30 seconds to release aromatic flavors without burning.
- Spread 4 cups cold rice across the griddle surface. Allow rice to sear for 2-3 minutes without stirring, creating crispy golden edges.
- Drizzle 2 tablespoons sesame oil and 3 tablespoons soy sauce over the rice. Use a flat spatula to gently fold and coat the grains evenly.
- Incorporate scrambled eggs, sautéed vegetables, and optional 1 cup protein (chicken, shrimp, or tofu). Sprinkle ½ teaspoon black pepper across the mixture.
- Continue cooking and folding ingredients for an additional 2-3 minutes until everything is heated through and well combined.
- Transfer rice mixture to serving plates. Garnish with chopped green onions if desired. Serve immediately while hot and crispy.
