Instructions
- Pat the 24-ounce bone-in ribeye completely dry using paper towels. Generously season both sides with salt and pepper at room temperature.
- Heat a cast-iron skillet over medium-high heat. Add 3 tablespoons of unsalted butter until it melts and starts to foam.
- Carefully place the seasoned steak in the center of the skillet. Sear for 3 minutes without moving, creating a golden-brown crust.
- Flip the steak and continue cooking for another 4 minutes. Reduce heat to medium-low and cook for 8 to 10 minutes total, aiming for an internal temperature of 130-135°F for medium-rare.
- Push the steak to one side of the skillet. Add 3 smashed garlic cloves, 1 sprig of fresh thyme, and 1 sprig of fresh rosemary to the remaining butter.
- Tilt the skillet and use a spoon to baste the steak continuously with the herb-infused butter for 2 to 3 minutes.
- Remove the steak from the skillet and let it rest on a cutting board for 10 minutes. This allows the juices to redistribute throughout the meat.
- Slice the steak against the grain into ½-inch thick pieces. Transfer to a warm plate and serve immediately with your favorite sides.
