Instructions

  1. Heat 1 tbsp oil in a large skillet over medium-high heat at 375°F. Add 1.1 lb minced beef with ¼ tsp salt and ½ tsp black pepper. Break meat into small pieces while cooking for 5 minutes until golden brown.
  2. Mix finely diced onion, red and yellow bell peppers, and 3 minced garlic cloves into the beef. Sauté for an additional 5 minutes until vegetables soften and become translucent.
  3. Sprinkle 3 tbsp fajita seasoning, 1 tsp smoked paprika, and crumbled beef stock cube over the mixture. Stir constantly for 2 minutes to activate spice flavors and evenly coat the beef.
  4. Pour in 14 oz passata, 2 tbsp hot pepper sauce, 2 tbsp tomato paste, 14 oz drained black beans, 1 tsp brown sugar, and ½ cup water. Blend ingredients thoroughly.
  5. Reduce heat to low, simmering the skillet contents for 10 minutes. Stir occasionally to prevent sticking and ensure even cooking.
  6. Distribute 1½ cups mixed grated cheese across the skillet surface. Cover with a lid, allowing cheese to melt completely for 2 minutes at low heat.
  7. Serve immediately over boiled rice. Garnish with chopped cilantro, sliced jalapeños, diced avocado, and baby tomatoes as desired.
