Description

Mexican Ground Beef Potato Skillet delivers bold flavors in one satisfying pan. Tender potatoes and seasoned beef make dinner quick and filling.

Ingredients

Scale

Protein:

  • 1 pound lean ground beef

Vegetables:

  • 1 pound potatoes cut into ½ inch cubes
  • ½ cup diced yellow onion
  • 1 red bell pepper diced
  • 4 ounces diced green chiles

Seasonings and Extras:

  • 2 ½ teaspoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 1 ½ teaspoons kosher salt
  • 1 tablespoon freshly ground black pepper
  • 2 tablespoons avocado oil
  • ¼ cup cilantro chopped
  • ½ cup shredded cheese

Instructions

  1. Heat 2 tablespoons avocado oil in a large skillet over medium-high heat. Swirl the oil to coat the bottom, then reduce heat to medium.
  2. Add 1 pound cubed potatoes to the skillet. Stir frequently for 6 minutes until potatoes turn golden and start becoming tender.
  3. Move potatoes to one side of the skillet. Add 1 pound ground beef and crumble it while cooking.
  4. Mix in ½ cup diced onion and 1 diced red bell pepper with the beef. Season with 1-1 ½ teaspoons kosher salt and black pepper.
  5. Incorporate 4 ounces green chiles, 2 ½ teaspoons chili powder, 1 teaspoon cumin, and ½ teaspoon smoked paprika into the skillet.
  6. Stir all ingredients together and continue cooking for 6-8 minutes until potatoes are completely tender and beef is fully cooked.
  7. Check the seasoning and add extra salt if your taste buds desire.
  8. Sprinkle ½ cup shredded cheese over the skillet. Cook for an additional minute until cheese melts completely.
  9. Garnish with ¼ cup chopped cilantro and serve the skillet piping hot directly from the pan.

Notes

  • Use waxy potatoes like Yukon Gold for the best texture and even cooking in your skillet.
  • Drain excess fat after cooking ground beef to keep the dish from becoming greasy and heavy.
  • Pat your ground beef dry before cooking to help it brown nicely and develop deeper flavors.
  • Season generously with salt and pepper throughout cooking to build layers of taste in your Mexican potato skillet.
