Instructions
- Heat 2 tablespoons avocado oil in a large skillet over medium-high heat. Swirl the oil to coat the bottom, then reduce heat to medium.
- Add 1 pound cubed potatoes to the skillet. Stir frequently for 6 minutes until potatoes turn golden and start becoming tender.
- Move potatoes to one side of the skillet. Add 1 pound ground beef and crumble it while cooking.
- Mix in ½ cup diced onion and 1 diced red bell pepper with the beef. Season with 1-1 ½ teaspoons kosher salt and black pepper.
- Incorporate 4 ounces green chiles, 2 ½ teaspoons chili powder, 1 teaspoon cumin, and ½ teaspoon smoked paprika into the skillet.
- Stir all ingredients together and continue cooking for 6-8 minutes until potatoes are completely tender and beef is fully cooked.
- Check the seasoning and add extra salt if your taste buds desire.
- Sprinkle ½ cup shredded cheese over the skillet. Cook for an additional minute until cheese melts completely.
- Garnish with ¼ cup chopped cilantro and serve the skillet piping hot directly from the pan.
