- Incorporate 1 cup small diced mango, 1 teaspoon ground turmeric, 2 teaspoons yellow mustard seeds, and ½ teaspoon kosher salt. Stir thoroughly to combine all ingredients.
- Pour ½ cup apple cider vinegar and ½ cup sugar into the pan. Stir continuously until sugar completely dissolves.
- Reduce heat to low and simmer the mixture for 15-20 minutes, stirring every 3-4 minutes to prevent sticking.
- Check the relish’s consistency – it should thicken and mango pieces should become tender but not mushy.
- Remove from heat and let the relish cool for 10 minutes at room temperature.
- Transfer the warm relish to a clean mason jar, leaving ¼ inch of space at the top.
- Optional: Sprinkle 2 tablespoons minced cilantro over the relish before sealing the jar.
- Refrigerate for up to 2 weeks, allowing flavors to develop and meld together.
