  2. Add ½ cup diced onion, 1 tablespoon diced Fresno chile, 4 tablespoons diced jalapeño, and 1 tablespoon minced ginger. Sauté for 2-3 minutes until vegetables soften and become fragrant.
  3. Incorporate 1 cup small diced mango, 1 teaspoon ground turmeric, 2 teaspoons yellow mustard seeds, and ½ teaspoon kosher salt. Stir thoroughly to combine all ingredients.
  4. Pour ½ cup apple cider vinegar and ½ cup sugar into the pan. Stir continuously until sugar completely dissolves.
  5. Reduce heat to low and simmer the mixture for 15-20 minutes, stirring every 3-4 minutes to prevent sticking.
  6. Check the relish’s consistency – it should thicken and mango pieces should become tender but not mushy.
  7. Remove from heat and let the relish cool for 10 minutes at room temperature.
  8. Transfer the warm relish to a clean mason jar, leaving ¼ inch of space at the top.
