Ingredients
Scale
Main Ingredients:
- 4 cups Cooked Long-grained Rice
- 2 large Eggs
- 1 Onion
- 2 Carrots
- ½ cup Frozen Green Peas
Supporting Ingredients:
- 2 cloves Garlic
- ½ tsp Ginger
- 4 tablespoons Soy Sauce
- 2 teaspoons Oyster Sauce
- 1 teaspoon Sesame Oil
- ½ teaspoon Chili Sauce
Seasoning and Garnish:
- 4 tablespoons Unsalted Butter
- 3 Green Onions
- Salt
- Pepper
Instructions
- Crack 2 large eggs into a small bowl and whisk them until completely blended and slightly frothy.
- Melt 1 tbsp unsalted butter in a large wok over medium-low heat, creating a smooth, even coating across the surface.
- Pour whisked eggs into the melted butter, gently scrambling until they’re fully cooked and slightly golden. Transfer scrambled eggs to a separate plate.
- Add another 1 tbsp butter to the same wok, letting it melt completely at medium-low heat.
- Toss in 2 minced garlic cloves, ½ tsp minced ginger, 1 diced small onion, and 2 diced medium carrots. Saute for 1-2 minutes until vegetables start to soften.
- Sprinkle ½ cup frozen green peas into the vegetable mixture, stirring to distribute evenly.
- Crank the heat to high and cook the vegetables for exactly 3 minutes, stirring constantly to prevent burning.
- Add 4 cups chilled cooked rice to the wok, mixing in 4 tbsp soy sauce, ½ tsp chili sauce, 2 tsp oyster sauce, salt, and pepper. Cook for 3 minutes, occasionally stirring to create crispy rice edges.
- Fold the previously scrambled eggs back into the rice mixture and drizzle 1 tsp sesame oil over the top.
- Give your fried rice a final taste, adjusting seasonings as needed.
- Garnish with 3 thinly sliced green onions and serve immediately while hot and fresh.
Notes
- Whisking eggs thoroughly before cooking ensures a smooth, even texture in your fried rice.
- Let the butter foam slightly before adding eggs to create a rich, golden scramble that adds depth to the dish.
- Cooking vegetables on medium-low heat helps them soften without burning, preserving their natural flavors and nutrients.
- Increasing heat to high when adding rice creates those delicious crispy bits that make fried rice so satisfying, but stir carefully to prevent sticking.
